Ingredients
225g unsalted butter, softened
110g granulated sugar
250g plain flour
1/4 teaspoon salt
1 teaspoon vanilla extract
12 tbsp strawberry jam
Directions
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Add the vanilla extract and mix well.
In a separate bowl, whisk together the flour and salt. Gradually add this dry mixture to the butter mixture, mixing until just combined.
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for about 30 minutes to firm it up.
Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Use a star-shaped cookie cutter to cut out 12 stars.
Place the star-shaped cookies on the prepared baking sheet, leaving a little space between each.
Using a smaller star-shaped cutter or a small knife, cut out a smaller star from the centre of half of the cookies. These will be the tops of the sandwich cookies.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Allow the cookies to cool completely on a wire rack.
Once cooled, spread a tbsp of jam on the solid star-shaped cookies.
Place the cookies with the cut-out centres on top to create jam-filled shortbread sandwiches.
